Vimal Arumugam and Shai left careers in banking and optometry to develop Baked Bird, a chicken wing concept built on a gastronomy world tour and 13 herbs and spices with no added oil. The oven-baked method produces wings with half the calories and saturated fat of the fried alternative, and the business has served over 50 tonnes of chicken at 100-plus events from a band of three food trucks. In 2025 they opened a permanent popup at Boxhall City and recently went one step further with a bricks and mortar location in London’s Goodge St.
