Ayesha Nurse launched Funky Elephant in Rickmansworth in 2015, drawing on the flavours of her native Barbados to build a Caribbean fusion street food operation. The jerk marinade at the heart of the menu has won five Great Taste Awards from the Guild of Fine Food, and the stall has appeared at Reading Festival and Gunnersbury Park Summer Concerts alongside private events across the UK.
