Anna MacDonald launched Happy Maki in 2013 out of a concern for ocean conservation, setting out to prove that fish-free sushi could work at festival scale. Described as the UK's first sushi street food van, the operation serves 100% vegan sushi burritos rolled to order including Hoisin Duck, Thai Sweet Potato and the Fully Loaded teriyaki chickn, which took the unanimous decision at the Brighton Veg City Challenge.
