Ed Sandeman, Henry Amodio and Harry Gibson took their wood-fired oven to Broadway Market in late 2014, sold some pizza, burnt a lot more, and got hooked on getting it right. The travelling pizzeria has since been crowned London Pizza Champions, expanded to a permanent restaurant in Peckham and an Italian bar and diner concept in Crystal Palace, and the original festival operation still runs with a full sound system and a 60-hour fermented dough.
