Sophia founded Paletas in Bristol in July 2018, bringing the Southern California tradition she grew up with to the UK: Mexican-style ice lollies made with whole fruit rather than juice and real organic cream in the creamy varieties, with no artificial ingredients. First appearing at Glastonbury in 2022 and returning in 2024, the range includes a wide vegan selection and is stocked in farm shops and independent retailers across the UK.
