Ryan and Beccy Galvin launched Phat Khao in January 2021 out of a converted horsebox in Briston, Norfolk, taking the name from a reversal of "khao phat," the Thai for egg fried rice. The chicken pad Thai became a standout early on, and the operation has since expanded to a green Airstream trailer that catches hungry festivalgoers eyes.
